Here's the drill.
1. Plug in your countertop electric griddle. Turn it to highest setting.
2. Pour a drizzle of oil on griddle or use non-stick spray if needed.
3. Empty one individual package of pancake mix into a mixing bowl.
4. Add three cups of water. Use slightly less or more water for thinner or thicker hotcakes.
5. Mix till smooth with a wire whisk or spoon.
6. Pour or scoop batter onto griddle and fry as many as you need.
7. Store leftover batter for up to several days in the refrigerator.
